Creamy Pumpkin Smoothie for Fall Energy & Gut Health
Fall is my favorite time to start getting a little creative in the kitchen—and pumpkin always makes its way into the mix. If you’re craving something cozy, creamy, and actually good for your energy and digestion, this pumpkin smoothie is the perfect place to start.
It’s packed with:
Healthy fats from full-fat coconut milk
Gut-supportive protein from collagen
Natural sweetness from dates or banana
A dash of Chaga mushroom for an adaptogenic boost
Whether you’re sipping it post-workout or blending it up for a cozy afternoon pick-me-up, this smoothie is a quick win for fall wellness.
Ingredients:
1 cup canned pumpkin (not pumpkin pie mix!)
1 can full-fat coconut milk
¾ – 1 cup unsweetened almond milk (depending on your preferred consistency)
1 scoop vanilla collagen protein (I like Bulletproof)
1–2 pitted dates or ½ a frozen banana
½ – 1 tsp cinnamon
½ tsp Chaga mushroom powder (optional, but I like Moon Juice brand)
Directions:
Add all ingredients to a blender and blend until smooth.
Taste and adjust sweetness or spice if needed.
Pour into a glass, top with a dash of cinnamon, and enjoy!
Makes about 2 servings—perfect for sharing or saving for later.
💡 Tip from Mandy:
Want to make it more filling? Add a tablespoon of chia seeds or a scoop of almond butter before blending. Want it colder? Throw in a few ice cubes or use frozen pumpkin puree.
